The conference highlighted the need for a strategic roadmap to deploy AI tools within India's massive food processing industry. While AI has begun to make inroads in Indian agriculture, its application in food processing remains in its early stages. "As an industry, we need to create a roadmap," stated Food Processing Secretary Anita Praveen. She expressed confidence in the support of the Ministry of Electronics and Information Technology (MEITY) in this endeavor.

Unlocking Potential: AI for Efficiency, Sustainability, and Farmer Empowerment

MEITY Secretary S Krishnan echoed Praveen's call for wider AI adoption, acknowledging ongoing efforts in agriculture while emphasizing the nascent stage of AI in food processing. NITI Aayog member Ramesh Chand underscored the potential of AI to transform the food processing sector into a climate-smart industry. He envisions AI contributing to increased farmer incomes, improved consumer satisfaction, and a reduced environmental footprint, particularly in the face of growing climate challenges. 

AI-powered Quality Control: Empowering Farmers and Consumers

One of the most promising applications of AI lies in developing simple, portable devices for quality assessment of agricultural produce. "Can we think of low-scale devices to check the quality of the produce?" proposed Chand. "In the absence of assaying devices, we are still focusing on quantity rather than quality." Implementing AI-powered quality control measures could significantly benefit both farmers and consumers. Farmers would gain valuable insights to optimize their production processes, while consumers could enjoy greater confidence in the quality of the food they purchase.

AI as a Tool for Net Zero: A Sustainable Future for Food Processing

Government officials see AI as a critical tool in achieving India's ambitious goal of net zero emissions by 2070. By optimizing processes and minimizing waste throughout the food processing chain, AI can contribute to a more sustainable food system.
